Schioppettino grapes. Vineyards facing
south placed in Ramandolo, on 350 –
370 metres above sea - level, sheltered
by Bernadia mount.
Kind of soil: eocene marnes.
Harvest is hand-made and usually takes
place in the second decade of October.
Colour: red with purple reflections.
Perfume: floral, peppery.
Flavour: peppery and persistent.
It blends with risotti, pork product, red
meat, sauced fish dishes, roast meat.
